Eevee in competitive

While I don't often look into competitive Pokemon gameplay, I was fascinated by Giovanni Costa's (perfect name too of Giovanni) use of Eevee in actual competitive play. Essentially, Sun and Moon give the ability to make Eevee a super booster (doubles competitive).
Are there any other super unconventional Pokemon that are actually viable (Pachirisu last year comes to mind too)?

Also you could baton pass a ton of stats to an eevee, and sweep peoples' teams
