On YouTube, there are a bunch of videos of people playing SMM 2 and giving reviews and that kind of stuff. But how is that possible?! IT IS STILL THE 27TH. And SMM 2 is coming out tomorrow. How are these people playing the game before its release date?

That is what press and review codes are for..? Companies give influencers and journalists copies of the game to review before the game comes out.
