The obvious answer would be the Swift Sail, but barring that, my favorite has to go to the grappling hook. In addition to grabbing ledges, you can also use it to steal items like the Golden Feathers or Joy Pendants from enemies before slaying them, and the stealing of teh item leaves them stunned for a (very brief) moment.

Got the game, so now I'm able to answer this I agree in that the Swift Sail is probably the best item. but if that's not to count, rather than the grappling hook, I'd say the Mirror Shield or Deku Leaf. Without the Mirror Shield, a lot of enemies would either be very hard to beat or impossible to beat. As for the Deku Leaf, you need it to access many areas in the game

Swift sile is the best item,i love to destroy the sharks with speed. i also love that they added the range on the bomb cannon since is a bit hard to aim on the original and they made it easier to lock on.

I would say either the Swift sail or the Bow. The Swift Sail is just awesome, it makes the sailing SO much easier. Instead of having to change the direction of the wind it does it automatically. It also goes at double the speed of the regular sail. And the grappling hook because you can steal ALL the loot! And grapple on to things to get to different areas.
