It's unfortunate but I don't think good MMOs exist anymore. I was growing up when .hack//SIGN came out and ever since then I've wanted an MMO experience like that, but none of them have ever delivered. Vanilla WoW and even Burning Crusade were good, but the game went into a massive downward spiral after that. My personal favorite was Tibia in the early 2000s, but, again, time ruins everything. Everybody played Maplestory as a kid, but once again, if a game lives long enough it seems it'll never stay good.
Aside from updates casualizing or breaking a game, I think the biggest issue is the changing MMO population. The old players of the genre have dwindled and this left a playerbase that has two very bad qualities: an aversion to talking to, communicating with, or cooperating with other players which these days basically reduces MMOs to boring single player RPGs, and the desire for instant gratification over grinding and struggling for rewards and levels. Playing Vanilla WoW for a few hours about every day would get you to its max level, 60, in about a month, and it would be longer for people who had less time or didn't know what they were doing. Now I could probably make 60 in a week.
If you're interested in MMORPGs, though, one I'd be on the lookout for is Tree of Savior. It's Ragnarok Online's successor from the same devs, and it looks fantastic. The people interested in it are mostly the same people who played Ragnarok when it was alive, so it is the old playerbase I mentioned above. It's in development and the beta tests are starting soon, so we'll get to see some gameplay and see how it works.
