What is the point of Perfect IVs in Pokemon?

I don't see why people need perfect IVs, seriously though can't you just level it up? It kind of makes no sence to me, can you explain it or something?
 
Here's an example,

A charizard with 31 IV(Perfect) in Sp.Atk with a Sp.Atk boosting Nature (e.g. Modest) and EV trained in Sp.Atk will have 348 max in that stat but if the IVs were Zero, the number would be 317 because you'll have to minus 31 for IVs.
IVs aren't a big boost but in competitive play a single number can give you an edge over the opponent.

IVs are values that you can't just get by leveling up. dilawer explained that pretty well. Perfect IVs aren't necessarily needed for the single player experience but in multiplayer you want your stats high wherever possible.
 
Yeah basically it's meant for competitive battling.
 
If you are in for competitive battling you should get a pokemon team with perfect IV's so it will help boost your stats like what @dilawer said because there are strong players out there , you never know .
 
Let's say you met an opponent and both of you have the same pokemon with the same nature. Your pokemon got 0 IV in speed while your opponent has 31IV in speed, your opponent will attack first, because his/her pokemon has higher speed stat.

it mainly gives an edge over your opponents - for example if you have two charizards versing each other with the same moves same weaknesses - and both equally matched - and 5 iv pokemon will have the advantage and will cause it to win
