What's the difference between Birthright and Conquest for
Fire Emblem Fates ?

About which kingdom you will be siding on.

If I get Fire Emblem Fates, this will be my first Fire Emblem game ever. It looks like a fun game from the trailer.

You might want to buy Birthlight one since it's better for newcomers.

Would it be better to pick up a New 3DS XL before this game comes out, or just stick with the old 3DS XL ?

The new handheld does not really affect the gameplay, I guess. It's not even a New 3DS exclusive.

I knew that, but I was wondering if it would be better with a second stick. I mean does anyone know if they would have a use for it ?

It's a strategy game, no need for a second stick.

Conquest is harder
Birthright is easyer

birthright:
you can train your characters
more easy
more hoshido classes avaiable
conquest:
harder
you cant train your characters
more norh classes avaiable

and there are one more version called revelation as dlc, but the developers recomend to play both birthrigth and conquest versions first

revelations:

more easy than conquest but more harder than birthright
you can train your characters
all the characters are avaiable in this version except 1 or 2
