Mario Kart Wii's controls are a little weird at first (especially while using the Wii wheel), but there is much more variety to the MKWii controls, since there are two different settings: Manual and Automatic. The only real difference between the two settings is the added ability to drift via the Manual setting. Mario Kart Wii was essentially the experiment to finding comfortable controls for everyone.
MKDS and MK7's controls are pretty much the same, but different mechanics. Not sure if the Wii U could be considered a sort of handheld (obviously because of the off-screen option with the game pad ), but the normal MK8 controls are no different. I personally find handheld controls to be easier, since I am able to see what buttons I'm pressing from my periphery.
