I haven't watched as much anime as lots of people here, but I recommend:

Shakugan no Shana - my favourite! Action/fantasy with romance and mild slice-of-life elements.
Vampire Knight - dark shoujo romance, I guess. It has a nice story but I wish the anime had a third season so it encompassed the full story, it only covers half the manga (which has the full story).
Higurashi: When They Cry - scary torture horror, like an anime Saw. I
Black Rock Shooter (OVA)

Everything @Barmont said, and maybe Sword Art Online. Bleach, personally, is my favorite. Not my first, but the one I most connected to, and even cried and laughed to! I don't know why, but when I watch Bleach, I think of this world that only I know. It's weird but great!

Clannad and Clannad: After Story are amazing, its really emotional.
Death Note is really good too, as well as Hunter X Hunter, but you've already watched Fullmetal Alchemist Brotherhood, which is one of the best, and its hard to beat it.

I really think Attack on Titan is a good one, but not for starters maybe (its too drama)
Other than what people says, I recommended Fairy Tail and Blue Exorcist ( both are action fantasy and funny moments) and yes, Hunter x Hunter (I finish the comic 10 times already, from volume 1-24).
Black butler is also a good action/comedy but also drama.
It depends on what genre you like really. There are soooo many good anime out there xD

You said you didn't know why they stopped making SAO. Well they really haven't officially said anything about stopping it or making a third season. But the next season, if they were to make it would be pretty long, since the next arc is HUGE if you look at the novels. The next arc is the Alicization arc which consists of book 9-15 (so far 15 is the latest out of the Alicization arc but there are going to be more.) so technically they probably wouldn't start making S3 until the alicization books come to a close which is going to take a year at the most.

Anyways, back to the question.
Well, it really depends on what genre of anime you prefer watching, where it's action, adventure, shounen, romance etc.
But there are a few that are all around animes.
1) Magi - Labyrinth of Magic (S1) / Kingdom of Magic (S2)
-This anime is absolutely amazing, after you watch from the 4th episode onwards, it is an anime that you won't put down.
Genre: Magic/Shounen/Adventure/Action/The tiniest bit of romance as seen in S2 at the end of a certain episode.
2) Fullmetal Alchemist/ Brotherhood
- This anime will probably bring quite a bit of tears to your eyes, from the first episode, it pulls you right in. Another plus is that you can find it all on YouTube!
Genre: Action/Family/Hurt & Comfort-ish.
3) Nagi no Asukara
- This anime is THE BEST romance, slice of life anime with elements of fantasy in it. It shows how you should never judge a book by its cover.
Genre: Slice of Life/Romance/Fantasy

That's all I have now. There are quite a lot of anime out there, so picking favs is a hard choice.
