I liked the star one in double dash. You have to get the sunshine star off a player, by hitting them with a item such as a green shell. You have to keep it for as long as you can, and the last player with the star at the end of the time limit wins the whole match! I loved playing this mode with friends, it's so much fun! ^.^

I prefer the balloon fight in Mario Kart DS
The courses was pretty good
The advantages of others balloon fight at Mario Kart Wii,7 and 8 they don't have time, so you are really in competition to fights others computers (or players)
I really like when you are multiplayer, if you lost all yours ballons, you can give free blocks (good for team fights)

I agree @MathiasDrake, Block Fort was my favorite balloon battle map in MK64. I also miss the old hardcore system. 3 balloons was pretty much 3 balloons unless you could pull off the mushroom trick. Now I feel like there are too many ways to get more.

I didn't touch the DS, Wii and found the 3DS version to be horribly generic... that whole 10 years or so of MK just went by me.
The clear winner for me though is 8.
It really feels like it went back to the series roots but made improvements which made the game feel more serious, balanced and competitive. The tracks feel a lot more like the 64 in design, they're not all enclosed like Double Dash, they're really wide open. The physics seems like it got the perfect balance, by far the best feeling Mario Kart I've played. I really love how they've done the items and just balanced it all so well. There is no more <censored> A.I or blue shells any more, if you're in first you'll often win and not get screwed over.
It has the best mix of tracks, the best music, graphics, the online actually is there and it works... as well as a Nintendo game can any ways. The only downer is the battle mode, but no one cared about it any ways, they would have done better just getting rid of it altogether. Even the DLC has been amazing, not only for a Nintendo game but they've done a better job than any one else in my recent memory.
I love Donut Plains and that new Rainbow Road, they're just so tight and bendy and I always win on them lol.

It is still something that I really enjoyed playing when I was smaller and I still enjoy the game today . It was just simply fun . Though they changed it a bit in the Mario Kart 7 ( with timer ) it is still fun

In Mario Kart Double Dash, there was the Shine Thief mode, which was really fun to play and was jokes with friends too. They changed it too much in DS though, it felt too different and wasn't as fun...
There was also the Bomb-Omb Blast or whatever they called, also from MKDD, where you would throw bombs at other cars (I don't remember the point of it really though xP). I remember once I kept throwing a bomb at my uncle's car whilst it was being blasted, meaning it would keep staying up in the air no matter what he did

I love the Ballon Battle in Mario Kart DS. Even though it has appeared in other Mario Kart games, it was a winner in DS. The DS stage is unique to play as and stealing balloons is fun, especially in Free-for-all. Also, when you die you can help out other players or troll them by making them chase your item box.

I liked collect the coins the best in Mario Kart 7. It was simple and didn't require too much hassle, unless there weren't any more coins on the track and you were lacking. Once you collect all 10 coins, you could just hide out somewhere for a little while with a stack of items on hand to protect yourself. Shine Runners was pretty fun as well.
