I got you.
1. All the different eeveelutions
2. There's still plenty of eevelutions they can add in the future
3. all the eevelutions have their own different flare and personality based off of their designs.

5. The shiny eevee looks really cool.
6. Eevee can use 6 of the different z-moves in sun and moon
7. Eevee has at least one unique move that can only be learned by Eevee in Let's go eevee
8. In let's go Eevee, Eevee simultaneously performs all the HM moves itself somehow
9. It can learn synchronize as an egg move for some reason
10. 90% of the moves it learns through leveling up are normal type moves
11. It technically has 9 different forms (one of them being eevee itself)
12. It will take a lot less than 2060 eevees to move a truck
13. You don't carry around eevee in a pokeball in Let's Go it seems like
14. In yellow your rival had an eevee and what it evolved into depended on whether you win or lose your first rival battle
15. In sun and moon you can get one at route 4 and route 6 making them catchable pretty early on
16. The Sun and Moon pokedexs claim that eevees ability to evolve into so many different forms is due to unstable genes.
