im interested in proving i beat SM3DL, but does it count as beating the game with the screenshot showing special worlds or just the ending credits or bowsers final castle?

Yup to special worlds or an icon that indicates you cleared the game on the main menu.

Also, what about pokemon shuffle/pokemon rumble world? What has to be done for them to be completed?

It can be any of the following: Pokémon Picross or Pokémon Shuffle or Pokémon Rumble World or Pokédex 3D. It's only one emblem but you can finish any of them to get the emblem.

I know but what do you consider "finishing" the game(s)? Collect all pokemon in rumble world? Beat all of the king's requests? I've gotten up go stage 220 in pokemon shuffle and collected some legendaries. Does that count?
